White millet is a cereal from the grass family, very ancient, cultivated in Africa and Asia, but also widely used as a staple seed for bird feeding.
Description:
Appearance: small, round, smooth seeds, ranging in color from cream white to ivory.
Size: about 2 mm in diameter.
Taste: mild, slightly floury.
Composition: rich in complex carbohydrates, plant proteins (10–12%), fibers, B-group vitamins (B1, B2, B6, niacin), minerals (magnesium, iron, phosphorus, manganese).

The composition of the chia seed closely resembles that of other mucilaginous seeds like flaxseed and psyllium.
